Sugar Free Blueberry Syrup

Syrups around our house are normally fruit based, my husband doesn’t like maple anything… So in an effort to keep myself on plan with Trim Healthy Mama and to help lower his sugar intake I make this Sugar Free Blueberry Syrup to top our pancakes and use in other recipes.Disclosure Statement

 

This is a simple syrup that can be made in whatever flavor combinations you desire, I’ve made it in these flavors :

 

 

Lemon:  replace blue berries with lemon juice

Other berries: substitute whatever berry you have for the blueberries

Peach: use peaches instead of berries

Pineapple: Use 1/2 cup drained or fresh pineapple chunks, reduce sweetener to 2 tsp

Butter Pecan: 1 TBS butter, 1 TBS toasted pecans, replace water with almond milk.

Banana Walnut: 1 tsp banana extract, 1 TBS Toasted walnuts, replace water with almond milk.

Many times when I’m making Ice creams in my 1.5 qt. Automatic Frozen Yogurt-Ice Cream and Sorbet Maker in White
, I swirl these syrups into the Cottage Style Vanilla Ice Cream or Sugar Free Cheesecake Frozen Custard. I also use them with muffin in a mugs, yogurt swirls and with cakes and cupcakes.

Sometimes the simplest of recipes become the most versatile. It takes a few minutes to make this Sugar Free Blueberry Syrup and it keeps for about 2 weeks in the fridge (if it lasts that long).

I did start using the new THM Gentle Sweet in this which is really nice because the xylitol acts a lot like normal sugar. Just be REALLY careful with anything containing xylitol if you have household pets because it is toxic to them even in small amounts.

A delicious simple sugar free Blueberry syrup.
Ingredients
  • 1 Cup water
  • 1 Cup Blueberries (frozen or fresh)
  • 1 tsp lemon juice
  • 2 TBS THM Gentle Sweet (2 tsp THM Sweet Blend)
  • ¼ tsp xanthan gum
Instructions
  1. Place Berries and Water into sauce pan heat over medium heat until berries pop.
  2. Add lemon juice and sweetener, allow to cook for 2 minutes.
  3. Remove from heat and whisk in the xanthan gum.
  4. Syrup will thicken as it cools.
Notes
** omit lemon juice if making a cream/almond milk based syrup
