Oven Roasted Okra

Oven Roasted Okra is about the only way I like okra as a main part of my meals. Growing up in the north in a home where veggies like okra were not a staple, I really didn’t have much experience with okra.

My husband isn’t a fan of okra, kind of like how I feel about peas (yes, I know they are good for me), so I don’t often make okra or peas as a veggie in our meals. When the Trim Healthy Mama Cookbook came out last year, I did start to incorporate more okra in our menus through the recipes that use it. I also started oven roasting it with some bacon at times but normally without.

Oven Roasted Okra is a great side dish and snack while following a trim and healthy lifestyle.

Normally, I enjoy oven roasted okra while my husband eats his peas. That’s a win win situation in our home, he gets a veggie that he likes and I get one that I like without the lecture about how good peas are for me (yeah, heard that one all my life especially sitting at a dark table with ice-cold peas on my plate that had to be eaten before I could be excused from the table = ensuring lifelong trauma when I see cooked peas).

Eat More Okra

One of my personal goals in 2017 has been to eat more okra. So for me to do that I started oven roasting whole bags of okra so that it is readily on hand when I need a side dish. I just pop it in the oven and crisp it back up if it has been stored in the fridge.

Oven Roasted Okra is Great for Diabetics

I did some research on okra and why it is so healthy and great for diabetics. The Trim Healthy Mama Plan book outlines a lot of this information, so go read your plan book!!

Interestingly, one of the largest benefits to diabetics eating okra is the fact that this little veggie helps to regulate your blood sugar as well as lower your cholesterol. It also is packed full of vitamin C and other minerals so helps with your immune system too.

Oven Roasted Okra is a Budget Friendly Addition to Your Menu

Anytime a fruit, veggie or food product will naturally help to regulate my blood sugar, I make a serious effort to include it in my meal plans. By oven roasting okra I can enjoy this beneficial food more frequently. The fact that it is very budget friendly and available in most grocers freezer department is also a bonus.

The Simple Way to Make Oven Roasted Okra

Crispy Oven Roasted Okra.
Ingredients
  • 12 ounces okra, frozen (I used Cut)
  • 1½ tablespoons coconut oil (or you can just spray them)
  • ¼ cup parmesan cheese
Instructions
  1. Preheat oven to 450 degrees.
  2. Toss okra with oil or spray with coconut oil cooking spray.
  3. Toss with parmesan cheese. Dump onto a rimmed baking sheet lined with parchment.
  4. Roast Okra for 12-15 minutes turning once or until done.

    I’ve only been able to eat okra if it’s disguised as chocolate 🙂 Is this slimy at all? If not it’s be willing to give it a try. But I just can’t get past the slime factor!

      Rick won’t eat this — it is a bit softer — I’m okay with a bit of softer — but it isn’t slimy — but to be honest I’d probably stick with your chocolate version just to be safe.

      If it’s baked or fried you don’t have the slime that’s usually when you boil it or add it to stews or soups

    I have always loved fried okra breaded in flour , so I am happily going to try this recipe with Parm cheese. I recently got the fancy silicone baking sheet (waffly kind) and planning on using it to make them crispy. Thanks for all your recipes , they help!

    When I was a small child in NC, we grew and ate okra regularly. Most people cut and sauteed it or cooked it whole steamed on top of fresh butter beans (which they also grew). I love okra but my family doesn’t. I have not heard of the roasted okra but I’m gonna try it. It looks absolutely delicious. Thanks for sharing.

    I roasted some okra for supper tonight and I ground up Pork Rinds in my food processor and tossed the frozen okra with it…tasty…will make again 🙂
