Air Fryer Easy Egg Cups

I love how easy these Air Fryer Easy Egg Cups are to make. I can prep for a couple of grab and go breakfasts each time I make them in my Nuwave Brio Air Fryer.

One of the biggest hurdles that My husband and I face is having something quick and easy to grab for breakfast in the morning. Rick isn’t a morning person, so the easier it is the more likely he will grab it.

These little egg cups fit that!! I can add whatever fllings we have on hand and make 6 of these babies at once on my days off so that he can grab a couple and warm them up at work, or eat them cold in the car.

My Favorite Way to Eat Air Fryer Easy Egg Cups

Many times I break them up into a low carb tortilla and warm them up that way since I’m not in as much of a rush in the morning. Let me tell you I LOVE the “reheat” feature on my NuWave Brio 3qt Air Fryer.

It is a preprogrammed button that is set for 4 min. Perfect for reheating 2 of these wrapped in a low carb tortilla or wonder wrap.

My Air Fryer is fast becoming one of my favorite kitchen tools, right along side my Instant Pot Duo60. Both save me a ton of time and a whole lot of heart ache over failed recipes. 

Rick thought ahead and even got me this nifty Accessory Pack for my Air Fryer. I love the rack, it really makes it easy to lift things in and out of the basket, and it flips so I can cook more than 1 layer at a time.

 

 

I’ve made these Creamy Egg Cups in a Jar in my Instant pot, and now I can make these amazing Air Fryer Easy Egg Cups in about 20 minutes start to finish. What’s not to love about that!! 

 

I can make them a fuel pull by using egg whites and kale or spinach. Make them an S with some cheese, sausage or bacon along with my veggies of course. Or I can pair them up with a couple slices of Sprouted Wheat Bread or bagels that I make from this Sprouted Wheat Dough. How cool is that?

Ingredients
  • 6 tablespoons sausage, cooked & crumbled (divided)
  • 6 tablespoons frozen chopped spinach (divided)
  • 6 teaspoons shredded Co-Jack cheese (divided)
  • ¼ cup Egg Beaters® 99% egg substitute (divided)
Instructions
  1. Cook your Sausage Crumbles. set aside
  2. Grab your muffin cups and layer 1 TBS each sausage crumbles, spinach and 1tsp cheese into the cups. Pour your egg mixtre over the top.
  3. Place your muffin cups in the basket and bake at 330 for 10 min.
  4. Allow egg cups to cool slightly before eating.
