Mock Apple Fritters

Apple Fritters are my husband’s favorite hand held pastry. These mock apple fritters bring you the classic flavor and texture of the not so healthy version into your home in a healthy way. They are Sugar free, Low Carb and delicious!!


  These Mock Apple Fritters were originally a guest post for Nana’s Little Kitchen. Teresia had asked me to come up with a recipe using her Lighter Low Carb Pastry Dough and my Mock Apple Pie Filling. Life happened and she wasn’t able to get them posted over there, and I sure don’t want anyone to miss out on these Amazing treats!!

How I Made Apple Fritters Healthier

The first thing that I needed to make the mock apple fritters was a pastry dough. The recipe for Lighter Low Carb Pastry Crust was perfect! It gives you the texture of a fried donut from something baked in the oven.

Secondly, I needed a filling. My Mock Apple Pie Filling uses Chayote Squash as a replacement for the apples and it is a non starchy vegetable.

Lastly, they needed a glaze. I personally love the glosting recipe from my Trim Healthy Mama Cookbook, So I used that. It is on page 285 .

Why I Use Chayote in these Mock Apple Fritters

Texturally this squash is a bit harder than zuchinni and not nearly as wet when you use it for cooking in recipes like this. It is available at ethnic markets and some local grocers depending on the region you live in. If you can’t find it, you can use zuchinni or jicama.

A Little Bit About Chayote

When I first posted my Mock Dutch Apple Pie mama’s kept asking why use it instead of zuchinni?

I’ve watched my carbs for many years, diabetes is heavy in my family genetics. Chayote was an ingredient that I was introduced to when I lived in south west Kansas. It is prevelant in dryer climates and is used in a lot of southwest, south american and carribean dishes.

It is a versatile vegetable that takes on the flavors of what it is cooked with and is many times used to replace potatoes in soups and stews.

You can eat it with the skin on or off (I prefer to peel mine). If peeling you need to wear gloves as the sap or juice can irritate your skin when raw (Trust me WEAR GLOVES! I didn’t and my hands were numb for a couple hours even using my husband’s automotive hand cleaner)

Why I Used Nana’s Ligther Low Carb Pastry Crust

As I said in the beginning of this post, Teresia had asked me to try her Lighter Low Carb Pastry Crust with my pie filling. 

I also trust her recipes for flavor and textures because she does vigorous recipe testing before posting. Many times we test recipes for each other to make sure the directions are clear, the taste is palatable to others and because it is fun. She has given me pointers on seasonings and was one of the original testers of The Best Chocolate Chip Cookie Recipe

Mock Apple Fritters that taste like the real deal. These sugar free low carb mock apple fritters bring the taste and texture of classic apple ritters to your healthy lifestyle.
Ingredients
  • 2 Nana's Lighter Low Carb Pastry Crust
  • 1 Mock Apple Pie Filling
  • Glosting from the Trim Healthy Mama Cookbook (page 285)
Instructions
  1. Prepare Mock Apple Pie Filling. Allow to cool slightly (you will have pie filling left over that can be refigerated or frozen)
  2. While filling is cooling, prepare 2 batches of Nana's Lighter Low Carb Pastry Crust.
  3. Form the Pastry Crust into 3 inch circles place 2 TBS of filling into the center and bring the edges together and crimp closed.
  4. Place Fritters on a parchent lined baking sheet and Bake at 350 degrees for 20-25 minutes or until golden.
  5. While Fritters are baking, mix up the glosting.
  6. When Fritters are done allow to cool for 10 minutes on sheet pan and then place onto a cooling rack with the baking sheet under it -- Glaze the fritters and enjoy.

    Judy….can these be frozen after they are baked? I was thinking I could then just heat them up and put the frosting on.

    Okay, I’m easily overwhelmed by a recipe that has many steps involved. But…this really was not difficult at all. And they are delicious! I fooled all of my children except one, but he is extremely picky anyway. Thank you very much for sharing this.
