This pumpkin cottage whip is a wonderful no bake pumpkin pudding. It is quick easy and super yummy. You would never know that it is low in fat! Richly satisfying i had a hard time eating all of my serving.

Rick is one of those guys that likes his pumpkin pie but he enjoyed a small serving of this also.

Ingredients
  • 1 cup 1% cottage cheese
  • ¼ cup pumpkin puree
  • ½ teaspoon perfect pumpkin pie spice
  • 2 teaspoons THM Super Sweet Blend
Instructions
  1. place all ingredients in a mini processor or blender cup and process until smooth and combined.
Notes
To enjoy as an E:
You can also eat this as a dip with my sourdough pretzel crackers; however it then changes to an Energising fuel for Trim Healthy Mama's like me.
To enjoy in as an S
You can enjoy this as a dip with cinnamon crisped joseph's pita chips; however you should cut the serving size to ¼ cup so that you don't go over the carb limits out lined in the Trim Healthy Mama Plan book.

    I tried this recipe tonight! I thought it was great. A pinch of vanilla powder or a few drops of vanilla extract would make it even better.

    I made something on my own that was like a pumpkin custard. I used the pumpkin, cream cheese (tablespoon), tablespoon of heavy cream, pumpkin pie spice. Mixed it all up and then heated it in the microwave. Yummy.

    I am wondering about the cottage cheese/pumpkin purée ratio since I am not a cottage cheese fan. It sounds good and the reviews make it even more tempting. Is the cottage cheese a strong flavor in this?
