As we all know I am addicted to cereal. I add it to my smoothies, greek yogurt, eat it cold as well as drenched in almond milk.
I grew up in a house where hot breakfast just wasn’t happening unless my brother Steve was making pancakes or I made my own. It was a treat to go to my grandparents where my grandma made hot breakfast most mornings, but cereal is quick easy and affordable.
I started missing cereal a coupe months ago, so I made Trim Mint Cereal which is still one of my favorites. When it is time to restock my supply I have been making a variety of other flavors. Today was no different. I had to try a new flavor combination. Cherry Cheesecake and Brownie Bits.
The brownie bits are the Trim Mint Crispy Cereal without the mint.
The Cherry Cheesecake Crumble Recipe.
1/4 cup Whey protein powder
2 TBS Oat Fiber
2 TBS Coconut Flour
1/3 cup Sweet Blend ( I used homemade)
1/2 tsp baking powder
1 TBS 0% Plain Greek Yogurt
2 tsp Cherry extract
3-4 drops of food coloring (optional)
1/4 cup Virgin Coconut Oil
1 Batch modified Trim Mint Cereal
Preheat oven to 300 degrees.
Place all dry ingredients into a bowl. Whisk to combine.
Add yogurt and coconut oil and combine. Mixture will be crumbly.
Dump onto a baking sheet (it needs to have raised edges to ensure that the oil doesn’t leak off) lined with parchment .
Bake for 10-15 minutes.
Remove from oven and stir while still hot, it is okay if it looks like it melted all together, clumps will form as you stir.
Allow to cool, cereal will crisp up A LOT as it cools. break apart into bite size pieces.
Mix both the Brownie Bites and the the Cherry Cheesecake together before storage.
